I love finding new recipes to wake my kids up with. This one is definitely one of their favorites. I must say, there is no better smell to wake up to. We love turkey bacon at our house and these Turkey Bacon Egg Muffin Cups are the best.

I’m always trying to think of new breakfast ideas to feed my family. We are huge bacon lovers, but are trying to eat healthier and have loved making the switch to turkey bacon.
Jennie-O Turkey Bacon is gluten free, low in sodium and low in calories and fat. You just can’t go wrong.
How to make the recipe:
To make this recipe, I started by spraying a muffin tin with nonstick cooking spray and putting a piece of turkey bacon around the edge of each cup.
Next, I filled each cup with a small circle of bread at the bottom and topped it with an egg, salt and pepper, cheddar cheese and green onions.
After cooking at 375 degrees F for 30 minutes, I pulled them out of the oven and they were ready to eat. It was all I could do to let them finish cooking, because they smelled SO GOOD.

Could I make these with pork bacon instead of Turkey bacon?
You could easily use any bacon for this recipe. However, we highly recommend the turkey bacon for the nutritional benefits.
I also prefer the taste over pork bacon. It tastes more fresh, less heavy, and still has an amazing bacon flavor to it.
You will love it, I promise.
Can you freeze these after they have been cooked?
You could easily freeze these after they have been cooked, and reheat them as needed. We don’t recommend keeping them in the freezer for longer than two weeks.
We also recommend them fresh, because they lose that amazing texture, once they have been frozen and reheated.

Turkey Bacon Egg Muffin Cups Recipe
We love turkey bacon at our house and these Turkey Bacon Egg Muffin Cups are the best.

Ingredients
- 12 strips turkey bacon
- 6 slices wheat bread
- 12 eggs
- salt and pepper to taste
- ½ cup shredded cheddar cheese
- 4 green onions sliced
Instructions
Preheat oven to 375 degrees F.
Spray a muffin tin with nonstick cooking spray.
Place a piece of turkey bacon around the edge of each muffin cup.
Using a small circle cookie cutter, cut out 12 circles of bread and place in the bottom of each muffin cup.
Crack an egg in each muffin cup on top of the bread and inside the turkey bacon.
Top with salt and pepper, a sprinkle of cheddar cheese and garnish with sliced green onion.
Bake for 30 minutes, or until egg is set up in the middle.

We haven't tried freeing these but they last for 3 to 4 days in the fridge in an airtight container and still taste fresh.
