Blanched Almond Butter Recipe Photos

Ok,…I am SOOOO excited about this recipe! But first, I have to share with you all that wowzers…shooting these photos were quite the challenge.

I have always had the theory that everything (especially food), looks better on white. Well, I needed and wanted to step out of my comfort zone for this photography shoot.

This subject might I add was a bit bland, no color what so ever, so I had to create some depth for these images. Well, what better way to do that then to add some contrast right?

I dive into a lot of this and much more in my photography series. So if photography is your thing, head on over and check out this series of post. I post new posts from time to time, so be sure to check back frequently.

So let’s move on to the recipe…

A Lot of Almond Butter Recipes

I love almond butter! I have recently started to really cook with almond butter because it really creates a realistic recipe when it comes to substituting ingredients.

Here are several recipes where almond butter is the star ingredient.

  • Chocolate Zucchini Bread {Gluten and Grain Free, Paleo}

So when I started to use more almond butter, I was quickly breaking the bank with the steep prices. I knew that I had to find an alternative to store-bought almond butter.

Buy Slivered Almonds

So I went on a mission to make a more affordable almond butter that was more nutritious than store bought and more cost efficient. Are you with me here?

I accomplished this by purchasing slivered almonds. There are several reasons why you should purchase slivered almonds.

  • First, you will save a lot of money when youbuy almond slivers. Whole almonds can cost upwards to $15.00 a pound. I bought a pound of slivered blanched almonds locally for under $4.00!
  • Second, almond slivers are usually blanched and blanched almonds are typically easier to digest.I will get into that in one moment.

Save Over 70% By Making Your Own

So as I mentioned above, almond slivers are totally reduced in price. I got a 10 oz bag for a little over $2.00. In fact, let’s be exact here for a moment.

  • 4 oz blanched slivered almonds cost me $.97.
  • I need 16 ounces or 1 pound for this recipe.
  • So this almond butter will cost me $3.88 (4 oz bag x 4 = 16 oz) to make (plus a little more for the coconut oil).

I did some research and a 12 oz container of “blanched” almond butter cost $20.99…OUCH right? So a little math here, that is $1.74 an ounce. Remember we are only paying $.24 cents an ounce to make it homemade with blanched almond slivers, that is over a 70% SAVINGS!!

The best deal that I found for quality blanched almonds online was $.65 a pound. You can find online slivered almonds here.

I mean really…would you ever pay over $20.00 for blanched almond butter? A lot of folks evidently do, they are on back order and it is really hard to find it in stock at the moment.

So Why Blanched Almonds?

Ok, so I know…this post is getting a bit long, but I have so much to say, ya know? 🙂 Bear with me for just a few more minutes. I just want to quickly explain to you why blanched almonds are better for you.

I recently did a post onIs soaking nuts necessary and how to properly soak raw nuts.Nutshave phytic acid. Phytic acid is also found in grains and legumes as well. In almonds, the phytic acid is in the outer layer of the nut or the skins.

Phytic acid binds to minerals in the gastrointestinal tract and can not be absorbed in the intestine and to many bound minerals can lead to mineral deficiencies. By soaking and removing the skins, you are breaking down the phytic acid so it can be absorbed correctly for proper digestion.

Blanched nuts have been soaked and the outer skin of the almonds have already been removed. This is why it is important to seek out the blanched almond butter.

Now For The Simple Blanched Almond Butter Recipe

Ok, so we are finally here…the recipe! You all are going to be amazed how easy it is to make your own nut butter. Ready??

You will need a food processor for this. It doesn’t have to be fancy or anything, just a quality good food processor will do the trick.

Place all the ingredients, except the salt, in the food processor and blend on high for 2 minutes. Scrape the sides of the bowl with a spatula and turn the food processor back on for another 3 minutes or until smooth, like this.

Now add the salt and pulse several times to incorporate the salt throughout the almond butter. Place into a pint jar and store in the refrigerator.

That’s it! I know, totally simple, right? So head on out and get yourself some slivered almonds in the baking isle of your grocery store.

You will never buy store bought almond butter again, this is just too darn easy to make and taste so much better!

FAQs

Why is my homemade almond butter not creamy? ›

Roasting them for just 10 minutes before blending allows the natural oils within the almonds to release toward the skin, which really helps in the blending process. So if you don't want to roast them, you will need to add some oil, about 2 or so tablespoons to help it become creamy.

Why is blanched almond butter better? ›

The benefit of consuming blanched almond butter is that it contains no phytic acid and may be easier to digest. The downside is that you will be missing out on the beneficial polyphenols, but of course, you may get these from other sources. It's one of those give and take situations.

How do I know if almond butter has gone bad? ›

When almond butter has gone bad, there are several signs to look out for. Check for any unusual or off-putting odors. If the almond butter smells rancid or has a sour or fermented aroma, it is likely spoiled. A change in taste, such as a bitter or unpleasant flavor, can also be a sign of spoilage.

Is it cheaper to make your own almond butter? ›

Homemade almond butter is more affordable, too.

Just compare the price of one pound of raw almonds to the price of your favorite almond butter. The cost savings depend largely on the almond butter. I've bought jars of almond butter at Trader Joe's for seven dollars, so there's not much savings opportunity there.

Why is my homemade almond butter so thick? ›

Almond butter can be stored in the fridge for up to 2 weeks and may last even longer as long as you don't introduce any moisture to the jar. Nut butter will thicken when chilled, so that can make it slightly harder to spread on toast, but it will thin out when you bring it to room temperature again.

Why is my homemade almond butter so dry? ›

Tips: If you're making almond butter without oil (just roasting) and it seems dry and flaky and not turning into butter, there's likely two reasons: 1) the almonds needed to roast just a little bit longer (see temperature note above), 2) the brand of almonds.

Is blanched almond better than Unblanched? ›

Blanched Raw Almonds: Blanched almonds have had their skin removed. They are often preferred for their mild, slightly sweeter taste and smoother texture. The removal of the skin can make them easier to digest for some individuals.

Which is healthier blanched or Unblanched almonds? ›

Blanching can affect nutritional value, too. According to one study, blanching helped reduce the phytic acid found in almond skin, an antinutrient that can affect digestion and prevent your body from absorbing helpful minerals like calcium and potassium.

What makes almond butter better? ›

Almond butter is high in monounsaturated fats. Monounsaturated fats help to lower LDL (“bad”) cholesterol and raise HDL (“good”) cholesterol. Many other nutrients in almond butter also help improve your heart health and lower your risk for heart disease.

Can bacteria grow in almond butter? ›

However, research has shown that while pathogenic foodborne microorganisms are unable to grow in these nut butters, they are able to persist in these foods at both refrigerated and ambient conditions for a long period of time.

Why didn't I refrigerate almond butter after opening? ›

As Janet Rausa Fuller explains in Epicurious, open jars of nut butters only last two to three months when stored on the pantry shelf. The easiest way to prevent your almond butter from going bad and extend its shelf-life—by as much as twice as long—is to pop it in the fridge.

Why does almond butter go bad? ›

Nuts and nut butter can go bad due to the fats—they should be stored in a cool area like a refrigerator/freezer or cool storage area. Spoiled almonds or almond butter tastes off or rancid. You'll know. Natural nut butters spoil over time, but spoil faster in warmer storage.

Why is organic almond butter so expensive? ›

Almond trees must grow to full maturity before they flower and bear nuts. They are also a crop which will grow only in certain places in the world (for Once Again, in California or Italy), and crops in these places are producing less flowers, thus less nuts. Demand is high, which makes the price rise.

Is organic almond butter worth it? ›

Almond butter stands out because it has the best ratio of unsaturated fats to saturated fats of all of the nut butters, and is also a great source of vitamin E. Organic almond butter is best, since organic products are less likely to contain potentially harmful contaminants.

What is healthier than almond butter? ›

Although almond butter holds more vitamin E and magnesium, peanut butter contains slightly more protein and a little less overall fat.

How do you keep almond butter creamy? ›

Store the jar upside down

This is a long-term solution that prevents the layer of dry, crumbly butter from ever forming, because by the time you get to the end of the jar it will have been flipped enough time for the oil to continually redistribute and keep the nut butter hydrated and smooth throughout.

Why is my nut butter not creamy? ›

If your homemade peanut butter is not creamy, it is likely due to not blending the peanuts long enough. Try blending for a few more minutes or adding a small amount of oil to help make it creamier.

What makes almond milk extra creamy? ›

Almonds, of course! Added authentic Blue Diamond almond oil blended with the Almondmilk you already know and love creates the extra creamy texture reminiscent of whole dairy milk. So basically, our answer to make our new Almondmilk was the use of more of our almonds because the Best Almonds Make the Best Almondmilk®.

How do you thicken almond butter? ›

Once the almond butter is smooth and you've added enough salt to suit your tastes, it's time to chill. The almond butter will be really warm and runny from the heat generated by the blender, so chilling helps it thicken, as well as prolongs its shelf life.
