Who doesn’t love a good chicken dinner? It’s classic.

Chicken is 100 % a main stay on our family’s menu and in my busy kitchen. I’ve always got some stocked in our deep freezer, and chances are there’s a rotisserie in the refrigerator that’s ready in a pinch.

Thankfully, my house of hungry boys loves all sorts of chicken, but they do have a request. They request that no matter what kind of chicken I make it be full of flavor and not boring. No plain boiled or poached chicken for them!

A Yummier Version of Shake and Bake

Shake and Bake chicken was a staple in my house growing up. For years I relied on it as well to feed my kids. I mean it was genius!

You throw some seasonings in a bag, add the plain ol’ chicken, literally shake things up, and then transfer the coated chicken to a prepared baking dish.

After baking in the oven, juicy on the inside with a crisp outer coating chicken was waiting to be transferred to your dinner plate and devoured. It was fool proof, and a perfect solution for supper on busy nights.

As with so many things in life though, there can be too much of a good thing, and eventually they got bored with basic Shake and Bake chicken. And if I’m being honest, so did we- the adults.

This onion crusted herbed chicken has the same crunchy exterior as Shake and Bake chicken but far more flavor thanks to a combination of French fried onions and herbs.

We can’t get enough of it!

How to Make Onion Crusted Chicken

Making this chicken breast recipe is similar to making Shake and Bake, but you mix up your own breading first.

To make onion crusted chicken, beat eggs in a bowl and set aside. Then crush a container of French fried onions.

Add the crushed onions to a mixing bowl along with the seasonings and chopped parsley. Give it a stir to mix it evenly together. Then pour the onion mixture onto a waiting plate.

Now take a chicken breast and dip it the bowl of beaten eggs. Shake off any excess egg.

Then dredge the chicken through the crushed onion mixture, turning it to coat it evenly. Gently push the coating into the chicken to help it stick.

Then put the onion crusted chicken into a greased 9×13 baking dish. Repeat this process with all the chicken breasts.

Once all the chicken breasts are in the baking dish, drizzle melted butter evenly over the chicken. Bake the chicken at 350 for 30 to 35 minutes, flipping it halfway through.

What to Serve with Onion Crusted Chicken

These chicken breasts are so good, I often find myself ready to chow down without another thought.

I have to stop and remind myself that superb chicken alone doesn’t actually make a whole meal, especially since I don’t even think the sons would complain if all I served was this chicken on a platter.

Luckily, this crispy chicken recipe is so versatile that they pair well with virtually anything as far as side dish options go.

I love to serve this buttery onion crusted chicken with a side of creamy mashed potatoes.

It also pairs well with stick of butter rice or stuffing. Round your dinner out with a side of green beans, some buttermilk biscuits and you’re good to go!

If you’re in a strict schedule, then plate this chicken with a simple side salad for an easy supper that will still win everyone over.

Ingredients

  • 4-5 chicken breasts trimmed of fat
  • 1 container French fried onions crushed
  • 1/4 tsp ground mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 3 tbsp chopped fresh parsley
  • 2 large eggs beaten
  • 4 tbsp butter melted

Instructions

  • Add the crushed fried onions to a mixing bow. Add the seasonings & parsley, and whisk together until evenly combined.

  • Pour the onion mixture out onto a waiting plate, and set aside. Lightly grease a 9x13" baking dish, and set aside.

  • Dip a chicken breast in the beaten eggs, gently shaking off any excess. Transfer the chicken to the coating mixture, turning to coat evenly. If needed, gently press the coating into the chicken to be sure it adheres.

  • Transfer the prepared piece of chicken to the waiting baking dish. Repeat until all the breasts have been coated and are in the dish.

  • Drizzle the melted butter evenly out over the chicken.

  • Bake the chicken at 350 degrees for 20 minutes. Remove the baking dish, and carefully flip the chicken trying not to dislodge any of the crispy onion coating.

  • Bake the chicken for another 10-15 minutes, or until the chicken's cooked through and the coating is golden brown and crispy.
