How to make chicken zucchini casserole

Start by seasoning the chicken breasts with garlic powder, oregano, salt, and pepper, with a drizzle of olive oil. Top with onion, zucchini, and tomato. Finish of with shredded cheeses. Bake in the oven for 20 to 25 minutes, depending on the size of your chicken breasts.

Directions

1. To make the chicken zucchini bake: Preheat your oven to 400ºF (200ºC). Add the four chicken breast cutlets to a shallow plate and season with olive oil, garlic powder, oregano, instant chicken stock, salt, and pepper.

2. Transfer the chickenbreast to a baking dish and top with onion, sliced zucchini, and tomato. Sprinkle the veggies with salt and pepper and a drizzle of olive oil.

3. Topthe chickenbreast and vegetables with shredded Parmesan and Mozzarella cheese.

4. Transfer the baking dish to the oven and bake uncovered for about 20 minutes or until the chicken is done. Broil for the last 2-3 minutes if you like.

5. Remove the chicken casserole from the oven and allow it to rest for 5 to 10 minutes before serving. Serve the Mediterranean chicken zucchini bake over cauliflower rice, rice, or couscous. Enjoy! ❤️

Tips for the Mediterranean chicken bake recipe

  • We cut chicken breasts horizontally to make them thinner and quicker to cook. We count 1 cutlet per serving but it depends on the size of the chicken breasts you have got.
  • Add half a teaspoon of Cayenne pepper to the seasoning for a nice kick of heat!

How to serve the chicken bake

If you’ve packed the chicken casserole with veggies, you can serve the Mediterranean chicken bake on its own. Otherwise, we love having the chicken casserole with a crisp salad, on top of couscous, rice, or – if you’d like to stay low-carb/keto-friendly – cauliflower rice.

How to keep the chicken bake leftovers?

You can keep any chicken and zucchini bake leftovers in an airtight container for up to 2 days in your refrigerator. Reheat in the microwave or cover in the oven at 350ºF (180ºC) until heated through.

    Quick, simple, and delicious. We have dietary restrictions in our house so no garlic, onion, or black pepper when we made it. While that would make it far less flavorful for some, given our restrictions, it was still quite tasty. I saw a number of comments about cook time, but I think that really depends on how thick things are. My pieces of chicken were close to 1/4" thick, veggies about the same, and I used quartered cherry tomatoes. After 19 minutes + 2 minutes broiling to brown the cheese, the chicken was fully cooked (avg 160F) and the veggies were "al dente" which is how we prefer them. If my cuts were thicker (1/2" or thicker), cook time would definitely need to be increased. I think if I were to add onions, I might sweat them for a few minutes in a fry pan before adding to make sure they were fully cooked at the end.The next time I make this, I'm considering a 1-3 hour marinade of olive oil, red wine vinegar, lemon juice, oregano, cumin powder, and ground coriander just to add some flavor to the chicken before baking.

    Easy to make, but the timing is WAAAAY off on cooking the chicken, it was still raw after 20 mins

    This was a hit with my family! Served over cauliflower rice- it might be because my baking dish is on the smaller side and my zucchini was quite large (so it wasn’t a single layer) but it took way more than 20min to cook…more like 40min. Not a big deal, but be sure to check the chicken is done if you have a crowded baking dish :)

    Made this tonight. ABSOLUTELY AMAZING! I tweaked a few things - I used a can of alymers accents instead of chopped tomatoes, used some Italian seasoning, and I used some onion powder because I ran out of onions. Also used some extra zucchini. I will definitely be making this one of our regular meal planning options. So yummy, quick and easy the whole family loved it. 10 out 10 recommend

    The two chicken breasts I used were huge, so I sliced them into multiple cutlets, which I then pounded out for evenness. I was quite liberal with the salt, pepper and garlic powder and subbed Italian seasoning for oregano. I had enough chicken cutlets to cover the bottom of a very large casserole dish, so I used extra zucchini. I halved a container of cherry tomatoes and also added a layer of jarred artichokes, cut into pieces. Lastly, I topped with an entire bag of shredded mozzarella and sprinkled generously with Parmesan. Baked for 30 minutes followed by a few minutes under the broiler. This was sufficient on its own for dinner without any side dishes. It does produce a lot of juice in the bottom of the dish, which I drained off prior to storing the leftovers. This dish was well received and will be made again. I do think I will add some fresh garlic and will use more seasonings on the chicken next time.

    I LOVED this recipe! I cubed 1 very large chicken breast, added diced orange bell pepper, red onion, 2 small zucchini, and half a can fire roasted tomatoes. I topped with 3 slices of thinly sliced provolone, but didn’t really NEED the cheese. I turned the juices into a gravy with a little cornstarch slurry. Ate this on its own with the gravy, topped with red pepper flakes, and lots of fresh parsley. This is a fantastic base to a nourish bowl with your fav grain, pickled red onion, and tzatziki! SO GOOD!!!

    Tasty and relative healthy. I nearly gave it 5 stars. I used cheddar instead of mozarella, added half an orange bell pepper and used some additional herbs such as thyme and oregano. I served it with couscous. Very easy to make and family friendly eating. Will definitely make again.

    Definitely needs more flavor. If I make it again I will try cutting the chicken in cubes , adding fresh garlic and I’d like to try fire roasted crushed tomatoes.

    REALLY needs some flavoring up! And you better really like oregano. Adding other Italian herbs and cutting down the oregano would be much better. But I think it would still lack some flavor. I’m going to try it again but with different herbs and adding Italian sausage.

    This was a very tasty meal, we tried it last night. I don’t think the time to cook is right, veggies were all still raw but the chicken was cooked. I might fry them ahead a bit first next time.

    Made this today for meal prep for the week. Delicious! I was worried it would be too much garlic, but it was perfect. So full of flavor. Next time I will add another zucchini because I love zucchini and there seems to be room for it. Thanks for the recipe!

    Excellent Dish!!👌 Very Flavorful and looks beautiful. A dish you could add to. I added 1 jalapeno finely chopped (without the seeds) for a semi spicy flavor. A can of Italian styled diced tomatoes ( saved me a trip from going to the store ) added to the flavor of the dish. One of my favorite recipes I've tried so far on the Internet.

    Easy, healthy dish with minimal ingredients. Many low-carb dishes are laden with too much fat for me. This one is light yet very filling and tasty. I did add an extra zucchini (because we love them) and 5 small peeled and diced Roma tomatoes. This recipe seems very customizable such as adding red pepper flakes and/or olives. Served over riced cauliflower. Overall a keeper and budget friendly!
