Layered rainbow cakes are a hot trend in desserts right now. You’ll find them at all the trendiest bake shops and all over Pinterest. I’m no great baker, but I do love to decorate cakes, cookies, and cupcakes. So I finally decided to give this intimidating cake trend a go, and it was so much easier than I expected! Using a boxed cake mix and store-bought frosting cuts down on prep time and lets you focus your energy on the decorations. You’ll also want to order this Easy Layers! 6-Inch Cake Pan Set by Wilton. I ordered mine for $9 on Amazon, and it’s the best $9 I’ve ever spent on bakeware. The magic is in the colors, sprinkles, and toppers you use, and a cute little cake stand never hurts either. Layered Rainbow Cake Ingredients:

• 1 box vanilla cake mix
• 1 1/3 cup water
• 1/3 cup vegetable oil
• 3 eggs
• 2 large canisters of whipped vanilla frosting
• Assorted sprinkles

Materials:

• Easy Layers! 6-Inch Cake Pan Set by Wilton
• Cooling Racks
• Cooking spray
• Food coloring

Baking Instructions:

Follow the directions on the back of the cake box to make your cake batter. Then reference the Easy Layers! insert for baking instructions. Or simply follow the steps below:

1. Preheat over to 325.
2. Spray pans with nonstick cooking spray.
3. Divide batter equally between five bowls. Dye each bowl of batter a different color and stir thoroughly. You want to colors to be super saturated because they will dull some during baking.
4. Bake 18-21 minutes, rotating the pans halfway through. Cakes are done baking when an inserted toothpick comes out clean.
5. Cool for 5 minutes before flipping onto a cooling rack.
6. Once cool, shave off the rounded tops with a bread knife to create a flatter top.

Decorating Instructions:

1. Place the bottom layer of your cake on a cake stand or cake plate. It’s easier to decorate it right on the stand than having to move it once it’s fully decorated.
2. Top the cake with a thick layer of frosting. Remember that this is a layered cake, so you want a thick layer of frosting separating each cake layer, so slather it on good. Top with another cake, slather with frosting, and repeat until the full stack of five cakes is fully assembled.
3. From there, you need to frost the sides. I used a regular flatware knife. Rotate the cake stand as you go. I typically do between 2-3 layers of frosting to cover any spots I missed. Make sure to cover the top entirely too.
4. There are lots of options for stylized frosting, but I like this textured look for its speed and ease. Take a regular flatware knife and pat the tip all around the cake to pull the frosting away from the cake to give it texture.
5. Top with a custom mix of sprinkles, and lay some around the base too to give it a finished look. You could also pipe frosting along the top and bottom, but I didn’t have the patience or steady hand for that.
6. I also sprinkled the sides of this cake with airy sprinkle flakes. I poured a handful into my hand and gently blew them onto the cake as I rotated it.
7. To finish, top with novelty candles or a cake topper. Perfect for birthday parties and special occasions. And just imagine a stack of orange, purple, and green for Halloween; red and green for Christimas; or ombre pinks for Valentine’s Day.
