Oh, are these not the cutest appetizers bites you have ever seen? And as cute as they are they were down right mouth watering delicious! All of the flavors of this scallopini sauce were doing a happy dance in my mouth! The sauce is a perfect blend of butter, wine, capers, mushrooms, garlic, and chicken stock. Yes, it was a happy dance for sure!

Why bite sized you ask? Well, I made this appetizer to take to my last book club meeting. We were discussing the book The Nest byCynthia D’Aprix Sweeney and I find it fun to match a recipe with a book. In the book there is a birthday party for Melody where Walker serves chicken scallopini for dinner along with coconut cake for dessert. So I brought both the bits sized chicken scallopini and mini lemon coconut cupcakes. More about the menu when I post my book review – coming soon.

Chicken Scallopini Appetizer Bites Recipe

Ingredients:

  • 1 clove garlic, pressed
  • 3/4 Cup butter, divided
  • 4 thinly sliced chicken breasts
  • 1/2 cup flour
  • 1/4 cup Italian seasoned bread crumbs
  • Salt and pepper to taste
  • nine mushrooms thinly sliced (that’s all that I had in the fridge!)
  • 2-3 teaspoons capers (or to taste)
  • 2 tablespoons lemon juice (about one lemon’s worth)
  • 1/4 cup white wine
  • 1/4 cup chicken broth
  • Sprinkle of flour

Directions

  1. In a small bowl, blend pressed garlic into 1/2 cup of butter softened. Set Aside.
  2. Combine flour and bread crumbs in a sealable plastic bag. Set aside.
  3. Place four chicken breast onto cutting board. cover with parchment paper and lightly pound and roll with a rolling pin to flatten chicken breast.
  4. Cut breast into bite sized pieces. Place pieces of chicken into bag of flour/breadcrumb mixture. Seal bag and toss chicken pieces to coat with flour and breadcrumbs.
  5. Heat pan over medium heat and add garlic butter. When butter sizzles, add chicken pieces. Be careful not to burn the butter! If the pan gets too hot, reduce the heat.
  6. Cook chicken pieces about 2 minutes on the first side, then flip and cook 2- 3 minutes on the second side. Cook chicken in batches until all chicken is cooked.
  7. Remove chicken pieces to platter and cover with foil.
  8. Darkened butter is OK, but charred is not. After two batches, my garlic and butter got a bit too dark, so I wiped the pan clean and added another 1/4 cup of butter to medium hot pan. Basically starting over. I had plenty of garlic in my chicken, so I did not add in any more.
  9. Add sliced mushroom to the butter and cook the mushrooms until soft.
  10. Stir in capers and add 1/4 white wine, 1/4 cup chicken broth and lemon juice to the mushrooms. Cook until liquid reduces. I wanted my sauce to be a bit thicker so I sprinkled in a little bit of flour. Throughly mix in flour and continue to heat over medium heat.
  11. Add salt and pepper to taste.
  12. Pour sauce over chicken and toss to lightly coat.

Doesn’t that look delicious? I was sooooo good! The kids were having a few bites and I had to put it away since this was headed to my book club meeting! They really wanted to gobble the whole thing up. I have promised them that I would make this for dinner for them next week. For dinner I will not be cutting the breast into bite-sized pieces. It iseasy!!!!

I did make this a couple of hours ahead of time. I covered it with foil and kept it in the warmer. It stayed perfectly! I was worried about the chicken drying out, but it did not. I took it to book club in the pretty yellow serving dish since I had to pack it in the car and drive up the hill. If I was serving it at home, I totally would have plattered them onto the bite sized serving dishes with the tiny forks!

I love this look for this appetizer. this dish is so delicious and elegant that it deserves to be dressed up!
