I'm loving the gorgeous fall weather we're having right now.
My favorite thing to do lately is sit on the porch with a mug of tea, read a book and enjoy the cool breeze! Fall is by far my favorite season and I try to enjoy every minute outside that I can.
Today's recipe is a delicious apple quick bread!
With the abundance of apples everywhere right now, it's the perfect time to make this bread.
We have plans to visit the apple orchard later this month, and I'm sure this bread will be made many more times before apple season is over.
The chunks of apple throughout the bread are wonderful, and the caramel glaze on top gives the bread an extra sweetness!
I slice the bread after it cools, and wrap each piece individually in aluminum foil so it's easy to take on the go, or pack in a lunchbox. This unique recipe is sure to be a new family favorite!
What is in Caramel Apple Almond Quick Bread?
- Brown sugar: Often produced by adding sugarcane molasses to refined white sugar crystals. There are two varieties, light brown sugar and dark brown sugar. Dark brown sugar has more molasses, which results in a darker color, richer flavor and more moisture. Try making your own brown sugar here!
- Baking powder: It's a dry leavening agent, with a shelf life about 9-12 months. Baking powder is used to increase the volume and lighten the texture of baked goods by causing bubbles in a wet mixture. Baking powder is usually made with a combination of baking soda, cream of tartar and cornstarch.
- All purpose flour: It's a combination of hard and soft wheats. Bleached flour provides a softer texture. It's versatile and you can bake most anything with it!
- Butter: A dairy product consisting of approximately 80% butterfat and made from the fat and protein components of milk or cream. Most commonly made from cow's milk, but can also be made from sheep, goat, yak, or buffalo milk.

- Preheat the oven
- Lightly grease a loaf pan
- Using an electric mixer, beat together the sour cream, brown sugar, eggs and vanilla
- Then add the flour, baking powder, baking soda and salt, beat
- Fold in the apples and almonds
- Pour the batter into the loaf pan and top with remaining almonds
- Lightly press the almonds into the top of the batter
- Bake for about 1 hour
- Cool in the loaf pan, then remove loaf and cool completely
- Sauce:
- In a small saucepan combine the butter and brown sugar
- Bring to a light boil, reduce heat, and stir constantly until sauce starts to thicken
- Remove from heat and drizzle over the top of the loaf

Ingredients:
- 1 cup sour cream
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups apples, finely diced
- 1 cup sliced almonds, divided
- buttery caramel sauce:
- 1/4 cup brown sugar
- 1/4 cup butter
Instructions:
- Preheat oven to 350 degrees.
- Lightly grease a 9x5x3 loaf pan and set aside.
- Using an electric mixer on low, beat together the sour cream, brown sugar, eggs and vanilla until combined.
- Then add the flour, baking powder, baking soda and salt, beat on low until well combined.
- Fold in the apples and 1/2 cup almonds.
- Pour the batter into the loaf pan and top with remaining 1/2 cup almonds.
- Lightly press the almonds into the top of the batter. Bake for about 1 hour, until toothpick inserted in the center comes out clean.
- Cool in the loaf pan for 20 minutes, then remove loaf and cool completely on a wire rack.
- Sauce:
- In a small saucepan over medium heat, combine the butter and brown sugar.
- Bring to a light boil, reduce heat, and stir constantly for 1 minute until sauce starts to thicken.
- Remove from heat and drizzle over the top of the loaf.
